The first day of the conference began with the theme of Biodiversity in the Dishes, inspired by the country's abundance of fish and wildlife, as well as the human multiculturalism. For this globally renowned academic event, chefs will meet to share techniques, ideas and trends in the culinary world. The special ingredients will be those that are locally available, paired with the cuisine by chefs from Brazil, Colombia, Argentina and Panama.
Three days of master cooking classes will be taught from 9:00 a.m. to 6:45 p.m. at the ATLAPA Convention Center. The 20 national and international participating chefs will share their knowledge with the local and global audiences from several countries, who come to keep up-to-date on the latest techniques and trends.
