Recipe: Chocao of Darién
Ingredients
6 very ripe plantains
1 sponge cake
1 coconut, grated
2 cups coconut milk
1 chunk of ginger, sliced
1 tsp. salt
Honey or sugar to taste
Preparation
Peel the plantains, split them in half lengthwise and remove the core. Cook in pot with coconut milk. Mash them and add the ginger, salt and sweetening. Continue cooking until it dries out. Pour 1/2 cup hot water over the grated coconut, knead, squeeze and strain.
