Cou Cou, the rich dish of the black ethnicity

The Cou Cou, often called hominy, is originally an African dish. It is a mixture of cornmeal, okra and a spicy salsa with pieces of habanero pepper, very popular on the island. This dish also can be made with breadfruit and green plantains.

Recipe: Cou Cou

Ingredients

2 cups cornmeal

1 oz. sliced okra

6 cups water

1 tsp. salt

2 tsps. butter

Preparation

Clean the okra, chop off the end and cut into slices. Cook in 3 cups water with salt to taste for 5 minutes. Mix the remaining water with corn flour and add to the pot with the okra. Let simmer, stirring constantly to prevent clumps from forming. Continue stirring until the cornmeal is cooked, soft and thick. Add butter and salt to taste and serve hot.
