The dash of lemon in the Saus

One of the dishes enjoyed by those living in Colon is the saus. The term "pickled pig's feet" (as it is called in other countries) does not give justice to all of the flavor in the Panamanian saus. Simply seeing a plate of saus will make your mouth water. We can enjoy this delicious dish at all of Panama's fairs and festivals.

Recipe: Saus, Souce

Ingredients

4 lbs. pork legs

1 bottle of vinegar, 16 oz.

10 limes

3 chombo hot chili peppers

Salt to taste

2 lbs. cucumber

1 1/2 onion

 Preparation

To prepare the pork: Shave the legs to remove all the hairs. Boil them in water, rinse and cook again in water with salt and garlic until tender.

To prepare the vinaigrette: In a glass bowl, mix the sliced cucumber, sliced onion, lime juice, vinegar, chombo hot chili peppers cut into quarters. Check the saltiness, and let sit for 1 hour to absorb the flavor.

Finally, add the legs and let stand at room temperature for at least 3 hours, until ready to serve.
