The traditional "Z" shape of the Almojábano

The cuisine of Chiriquí includes stews, ceviche, corn-based dishes, seafood and raw sugar cane juice. Plus several fried breads, like empanada pies, pastries, tamales and the traditional almojábano.

Recipe: Almojábano

Ingredients

1/2 lb. pounded corn

4 ounces of pressed cheese, grated

1 Tbsp. butter

2 cups oil

Salt to taste

Preparation

Cook the pounded corn in a pot, then grind it. Form a dough with cheese, salt and butter. Make small rolls about 1/2 inch thick and 3 inches long. Spread the ends between your thumb and index finger in opposite directions to form a long "Z" shape. Fry in hot oil until golden brown. Drain on paper towels. Note: You can buy the dough pre-prepared, and just mix with cheese.
