Flavors and sensations of One Pat

Cod is possibly the best known dried fish, and it constitutes some of the most famous dishes of Afro-Caribbean cuisine. Afro-Caribbean food is one of the delights that all Panamanians and foreigners should sample at any fair or activity where a community of black ethnicity gathers.

Each cook has their own secrets and individual ways of preparing this meal. Some even say that it contains aphrodisiacal ingredients.

Recipe: One Pat

Ingredients

3 coconuts

3 lbs. rice

1 lb. cod

1.5 salted pork tail

2 large packages of dried small shrimp

Chicken broth

Curry

MSG seasoning

Shredded coconut

Cilantro

Preparation:

Grate 3 coconuts and squeeze to extract the milk over a pot. Desalt the tail. Cook the cod and then shred to remove the fish bones. Put the tail and cod in the pot with coconut milk and let boil until the tail is tender. Then add the remaining ingredients: chicken broth, curry, MSG seasoning, cilantro and dried shrimp. Since it has already boiled some, add the rice and continue cooking until the rice is dry and ready to serve. Serve with a side salad of lettuce and tomato.
