Sweet raisins in “mamallena” bread pudding

Mamallena is how we call bread pudding, a universally popular dessert. This recipe finds a good use for stale bread, which is soaked, squeezed dry, mixed with other ingredients to form a dough and baked.

Recipe: Mamallena

Ingredients

1 loaf of white bread, with edges cut off and cut into cubes (can use 6 cups of stale bread)

3 cups cream (separated into 2 cups and 1 cup)

4 eggs

1 cup brown or white sugar

1 tsp. vanilla essence

1 cup raisins

Ground cinnamon, to taste 

Canned cherries, for garnish

Preparation

The first step is to preheat the oven to 350 °F and have a greased and floured medium-sized Pyrex pan ready. Slowly pour 2 cups of milk over the bread, giving it time to absorb, then stir and set aside. In a separate bowl, mix the remaining milk with eggs, sugar and cinnamon to taste. Pour this mixture over the bread mixture, stir well and add the raisins. Place the dough in the Pyrex pan and put a few cherries on top for decoration. Bake for 35 minutes, or until a knife inserted in the center comes out clean.
