Recipe: Tempting ripe plantains

Ingredients

2 very ripe plantains

1/2 cup sugar

1/8 tsp. salt

1 cinnamon stick

1 tbsp. of butter 

1 tbsp. of vanilla essence

Preparation

Cut the plantains into 1-inch thick round slices. Put them in a pot and cover with water. Add the sugar, salt and cinnamon and simmer until the sugar thickens. Add the butter and vanilla. Serve hot.
