Tasty fritters

These small balls of dough, only 3 cm across, are deep-fried til golden brown. The round shape can be done by hand, or with the help of two spoons once you have gained sufficient practice.

Recipe: Fritters

Ingredients

6 oz. flour

1 cup water 

1/2 tsp. salt

4 to 6 eggs

1 Tbsp. butter

Preparation

Heat the water until it begins to boil. Then add the flour slowly enough that it does not form small balls. Reduce the heat and stir until cool. Add the eggs one at a time, beating between each one, then add salt and butter. Roll the dough into a round shape between the palms of your hands. Fry each ball in a tablespoon of butter or oil and let fry until begin to crack open. Remove immediately and enjoy hot.
