Sample the flavor off, the Golden Spoon

Golden Spoon is a small fruit native to Central America. Its scientific name is Bysonima crassifolia and it belongs to the cherry family. In Panama it is known as Nance, and all Panamanians have sampled the Nance fermented liquour, Nance candies and Nance yogurt. This recipe is a slight variation to create a very nutritious and easy to prepare dessert.

Recipe: Golden Spoon Mousse

Ingredients

1/2 bottle of golden spoon fruit in water

1/2 cup of sugar cane molasses

1/4 cup flour

1/2 cup local white cheese, crumbled 

1 1/2 cup water

Preparation

If you use fresh natural fruit, puree it with a half a cup of water and strain to obtain a fairly thick juice. Add the molasses, and sprinkle the flour slowly to not form any lumps. Cook the mixture over low heat, stirring constantly until thickened and creamy. Serve this dish warm with white crumbled Panamanian cheese. This recipe yields four servings.
